I love bread. Bread with avocado, peanut butter jelly, paned mushrooms, toasted vegan cheese on top or even the humble bread with vegan butter. Pure bliss and oh, so delicious.
There is little to compare to it, maybe only the smell of freshly baked bread can beat it.
Here I am sharing with you my fool-roof and crowd-pleaser recipe for very good bread.
It only contains 5 ingredients and you can choose to use wholemeal flour or plain white.
We then to mix it 50/50 as a compromise in our household.
This recipe is our favourite as it mimics the supermarket ,toastie, bread in look and texture (it is so soft and squishy) but is far more healthy as there are no nasty ingredients and has more depth of flavour in my opinion.
This bread freezes very well, too, which makes helps you to avoid any waste.
You will need:
Two packets of instant yeast
3,5 cups of warm water
1/4 cup sugar (fair trade)
3/4 tablespoon salt (sea salt)
50 ml soft or melted vegan butter + more for brushing (I use naturli organic butter)
10 cups of organic flour (white or wholemeal - personally I mostly use 50/50)
2 bread tin forms/cake forms/baking trays
In a bowl add your yeast and 3/4 of warm water (baby bath warmth). Let it rest for 3-5 min.
Add your sugar, salt, remaining water (2 3/4 dl warm water), butter and 5 cups of flour.
Mix all together with a wooden spatula and gradually add the remaining flour (5 cups).
Use a dough hook or work the dough in hand for about 5-10 min. The dough will stop being sticky.
Place it back in the bowl and cover with a kitchen towel. Put in the oven on 40-50 degrees C for about 1 hour.
Set the oven for 195 degrees Celsius.
Get the dough out of the bowl and divide into halves. Flatten the dough gently (so there are no holes in the bred after - I really see the difference if I am lazy to do it). Roll up each dough into a roll to fit your tray and tuck in the corners. Place in a tray and bake on the lowest oven tray for about 35-40 minutes (your bread should be 92,5 degrees inside if you can check).
When your bread is ready then brush the top in melted vegan butter. Leave aside to cool for 10-15 min and then remove from the tin (so it does not get soggy). Let it cool down on a rack.
Now it is ready to eat or to freeze for other times:)
