Delicious & Easy 30 min Vegan Peanut Butter Cookies (1 Bowl Quick Biscuit Recipe)

This 1 bowl peanut butter recipe is just so easy (perfect activity to do with children or when bored or expecting last minutes guests), just under 30 min from start to finish and is, of course, cruelty-free and vegan as well. To me, these cookies are the perfect marriage with a nice (warm or cold) glass of plant-based milk or with my ultimate hot chocolate drink as an afternoon pick me up and oh, boy, have I needed those lately.
If you feel extra fancy you can add some chocolate bits to the batter or decorate the cookies with melted chocolate and sprinkle with some crushed peanuts or sea salt a swell.
They taste great crumbled over a nice-cream, too! :)
I hope you enjoy them as much as I do.
Ingredients: (about 20 cookies)
1 cup of 100% peanut butter
1 cup of your preferred sugar
1 cup of flour (I use a simple white organic one or oat flour, both work very well)
1/3 of a cup of your preferred plant-based milk (might need 1-2 tablespoons extra with some flours)
2 teaspoons of vanilla sugar or vanilla extract (I prefer the sugar version)
1 teaspoon of baking soda (or baking powder)
pinch of salt (I use sea salt)
Instructions:
Preheat your oven for 175 decrease Celsius.
In a bowl, add your peanut butter, sugar, salt, and vanilla and beat with a hand mixer for about 1-2 minutes.
Add your sieved flour and baking soda, plant-based milk and combine with a spatula (you can use your hand as well, but then you would need to leave to cool your dough in the fridge for about 30 min as your hands would warm the dough up too much and the cookies would not retain their shape as well while baking).
Prepare your baking tray and line it with a silicone baking mat or baking paper.
With a tablespoon, scoop out your dough into about 20 pieces. Quickly make each piece to a ball-shaped piece and flatten down the cookie with a fork (you may dip the fork in sugar or water for it to prevent sticking to the dough).
Place on the baking tray.
Bake in the oven for about 10 minutes ( depending on your oven as I feel like every oven has its own temperament). :)
Let them cool on a dinner plate and you may sprinkle them with some sugar, salt or drizzle in chocolate with crushed peanuts.
Enjoy!
PS: Store in an airtight container only after completely cooled down, eat them all or freeze the rest.

Hello dear Shaira, thank you for your lovely comment.
DeleteThese peanut butter cookies are quite easy and a great way to start with baking :)
Also you can search for my older blog post with the word: cronometer as I write about a free app which helps you track all
the meals you have eaten and tells you if you are lacking any vitamins or nutritions which i great when one is starting to go for a more cruelty free lifestyle:) My first attempt of going for a vegan diet did not go well at all and this app helped me to learn about foods so much and also in a very easy way:)
Thank you for stopping by and hope you are all well :)

I love peanut butter, and I love cookies, so this is just perfect for me! They look so easy to make! I've been so into cooking in lockdown, I just wish I had an oven so I would be into baking too.
ReplyDeleteEllie x // elliekblog.blogspot.co.uk
Hello dear Ellie,
Deleteohh, I hope you will enjoy this peanut butter cookies recipe if you try them :)
If you do not have an oven you can look into a toaster oven. It is much smaller so you can not make too much food
at one time but should still give much more possibilities in the kitchen :)
Hope you are well.
